Gluten Free Cheesecake
3 packages of gluten free cream cheese
1 large tub of whipped topping
1 large package of peach gelatin
1 large can of sliced peaches
1 box of gluten free cookies (optional)
open cookies and crush up. Lay on bottom of large 9x11 pan. This is optional because you don't have to have a crust on it. We prefer it with none and don't use one usually.
open can of peaches & drain.
put 1/2 of the can of peaches in mixer with cream cheese and refrigerated whipped topping (not frozen) and gelatin. Mix for 4 minutes or so, until it is all mixed thoroughly.
Pour mixture in 9x11 pan (over cookie crumbs if you did that). Top with the rest of peaches and chill for a couple hours.
Note: Other recipes similar to this call for 3/4 c or 1 c of sugar. This REALLY is not needed. The cheesecake is VERY tasty and plenty sweet without the added sugar.
