Weight Watchers Salsa aka Bills Game Bean Salsa aka Super Tasty Salsa

1 can garbanzo beans
1 can pinto beans
1 can black eyed peas
(drain and rinse the above 3 beans)
2 cans shoepeg (white) corn - do NOT drain
1 small can diced jalepenos (optional)
1 small jar pimentos
1 cup cider vinegar
1/2 cup sugar
1/2 tsp salt
1/2 tsp pepper
1 TBSP water

-Combine above ingredients in and boil 5 minutes.  Let cool completely.
-Once all cooled, add 1 cup finely chopped red onion and 1 finely chopped green pepper
-Refrigerate for at least 4 hours.  Tastes best if refrigerated overnight before serving.

We always make a double batch of this.  We only use 1/2 the amount of jalepenos.  Trust me, it is spicy enough (without being TOO spicy) with half the amount!  It is a great hit at potlucks and family gatherings.  Get a couple bags of Baked Tostitos to serve with it. 
Make sure to keep a bowl of it at home for yourself, because there won't be anything left from the potluck!!

Have leftovers?  Make up some rice and stir the salsa into it!  Now you have an awesome main dish for dinner!! :)
